This is a sushi omakase by Japanese chef Tsuchida Hidenobu, showcasing the flavors of his homeland using seasonal ingredients from various regions of Japan.
The akami, with its moderate presence of fat and a texture reminiscent of shari and jelly, is a must-try menu item.
As a finishing touch to the course, hojicha roasted by the chef will be served. Enjoy the harmony of the dish paired with recommended sake.
